Salty-sweet cake


Ingredients for 6 persons “Salty-sweet cake”:
- For the pastry:
gr. 200 of white flour,
gr. 100 of butter,
gr. 100 of sugar,
2 egg yolks,
For the filling:
gr. 400 of ricotta,
gr. 100 of ham in a single slice,
1 diced mozzarella,
grated pecorino,
1 whole egg plus 1 egg yolk (keep aside the egg white),
sugar, salt, pepper, oil for the pan.

Preparation “Salty-sweet cake”
On the pastry, pour the flour, add the yolks, the butter into small pieces, sugar, a pinch of salt and knead quickly. Form a ball with the dough and let it rest.
Meanwhile in a mixing bowl sift the ricotta, add the ham and mozzarella, diced, 1 tablespoon cheese, 1 tablespoon sugar, 1 egg and 1 egg yolk, salt and pepper and mix well.
Roll out the pastry into two thin disks, one larger than the other.
Grease a baking pan with oil and with the larger disk foderarne the bottom and sides. Fill with the stuffing and cover with another circle of dough sealing the edges well.
Brush the surface of the cake with the whipped egg whites advanced slightly with a fork and bake at 200 degrees for about three quarters of an hour.
